Chocolate Chip Peanut Butter Lava Protein Oats with 33g Protein

Baked oats have become a staple in my routine, especially on work-from-home days. They're quick, easy, and satisfy my sweet cravings in a healthy way. Recently, I whipped up a batch of these chocolate chip peanut butter lava protein oats post-run, and they were an absolute delight! The best part? You only need six simple ingredients, most of which you probably already have on hand!





What You'll Need:

  • 1/2 cup oats

  • 3 tsp stevia (or sweetener of choice)

  • 1/2 cup unsweetened almond milk

  • 2 tsp peanut butter

  • 1 tbsp chocolate chips (use dairy-free if needed)


Instructions:

  1. Preheat your oven to 350°F (175°C) and prepare an oven-safe single-serve dish by greasing it lightly or lining it with parchment paper.

  2. In a mixing bowl, combine oats, protein powder, stevia, and almond milk. Mix until thoroughly combined.

  3. Pour half of the batter into the prepared dish.

  4. Dollop peanut butter into the center of the batter.

  5. Pour the remaining batter over the peanut butter layer, ensuring it covers the peanut butter completely.

  6. Sprinkle chocolate chips on top of the oats if desired.

  7. Bake in the preheated oven for 20 to 25 minutes or until the oats are set and slightly golden on top.

  8. Once baked, remove from the oven and let it cool for a few minutes.

  9. Dig in and enjoy the gooey, protein-packed goodness!
