Double Chocolate Banana Bread

After undergoing surgery, I found myself with a mandatory 48 to 72 hours of rest ahead. While I couldn't lace up my running shoes or engage in any strenuous activity, I decided to make the most of my time by enjoying leisurely walks and delving into one of my favorite pastimes: baking. Because really, what else would one do when confined to the home? So, armed with spotty bananas on the countertop, I embarked on a mission to create something delicious, wholesome, and gluten-free. Thus, the Double Chocolate Banana Bread was born!

Ingredients:
4 ripe bananas, mashed
3/4 cup stevia or coconut sugar
1/2 cup olive oil (melted coconut oil would work as well)
2 eggs
1 cup almond flour
1/2 cup cocoa powder
1 teaspoon baking soda

Instructions:
Preheat your oven to 350°F (175°C) and prepare a loaf pan by either spraying it with cooking spray or lining it with parchment paper. Set aside.
In a mixing bowl, combine mashed bananas, stevia (or coconut sugar), olive oil, and eggs. Mix until thoroughly combined.
Add almond flour, cocoa powder, and baking soda to the wet mixture. Stir until the batter is smooth.
Fold in chocolate chips until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake in the preheated oven for approximately 55 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes.
Carefully transfer the bread onto a wire rack to cool completely before slicing.
After an hour of cooling, your Double Chocolate Banana Bread is ready to be enjoyed!
